Crispy fish tacos
Battered North Sea haddock, mango salsa, guacamole, sriracha mayo, shaved lettuce, toasted flour tortilla.
Every Friday
Pop-up food truck · Aberdeen beach
A chef-run food truck on Aberdeen beach esplanade. A new menu most weekends, fish tacos on Fridays, and once it's gone, it's gone.
Every pop-up is its own menu: fish tacos one weekend, roujiamo the next, French dips sliced from 10kg of roast sirloin the week after.
Portions are cooked for the day. Once they're gone, they're gone, so the earlier you get down to the beach, the more of the board you'll see.
Every Friday evening
The one that comes back every week. Down at the beach on Friday evenings when the truck is open.
Battered North Sea haddock
Mango salsa · guacamole
Sriracha mayo · shaved lettuce
Toasted flour tortilla
The truck
UP•ROOTED is run by a chef. Briskets are braised, pork shoulders roasted and sirloin carved for each pop-up, and new dishes appear because the chef wanted to try them.
Grab a stool at the counter or take it down to the sand.

Meet the chef
Nick started out cooking five-course plant-based pop-up dinners at venues like Foodstory, which sold out. In 2018 he spotted a little green food truck that had sat closed on Aberdeen beach for a long time, left his card in the door, and Roots was born.
Roots spent five years on the beach as one of the north-east's best-loved vegan trucks, with 4.9★ from 165 Google reviews. Taste of Grampian called him the "North-east's favourite vegan chef".
UP•ROOTED is the next chapter: the same chef and the same beach, with a bigger flavour range. Brisket, steak and North Sea fish now sit alongside the plant-based dishes Roots was known for, on menus that change with every pop-up.
Away from the truck
From sold-out five-course dinners to five years running one of the beach's busiest trucks, Nick cooks for private tables and advises food businesses on menus and kitchens. Send a message on Instagram to talk it through.
